Asian Quinoa Salad

Ingredients

  • 2 cups cooked quinoa
  • 1 red pepper diced
  • 1 cucumber diced
  • 1 cup edamame
  • 1/2 cup carrot shredded
  • 1 cup red cabbage shredded

Dressing

  • 1/4 cup soy sauce or tamari
  • 1 T rice or red wine vinegar
  • 1/4 cup chopped cilantro
  • salt, pepper and grated ginger to taste

Instructions

  • Combine salad ingredients in a large bowl. Drizzle dressing over individual portions.
    Accessorize with sesame seeds and slivered almonds.
