Asian Quinoa Salad
- 2 cups cooked quinoa
- 1 red pepper diced
- 1 cucumber diced
- 1 cup edamame
- 1/2 cup carrot shredded
- 1 cup red cabbage shredded
Dressing
- 1/4 cup soy sauce or tamari
- 1 T rice or red wine vinegar
- 1/4 cup chopped cilantro
- salt, pepper and grated ginger to taste
Combine salad ingredients in a large bowl. Drizzle dressing over individual portions.Accessorize with sesame seeds and slivered almonds.
