Vanilla Protein Bars

You know you’re scoring “cool mom” points when your teen son’s friends give you the thumbs up on your latest recipe. These vanilla protein bars are amazing!Jack (center) isn't as thrilled about his mother's antics as his friends are!

Vanilla Protein Bars

Total Time 1 hour

Ingredients

  • 3 cups old fashioned oatmeal
  • 3 packets Vanilla Shakeology
  • 3 Tbsp Cinnamon
  • 2 cups dark chocolate chips
  • 1/2 cup sliced raw almonds (or cashews)
  • 1 cup Peanut Butter
  • 1/2 cup unrefined coconut oil
  • 1/2 cup Honey
  • 2 tsp pure vanilla extract

Instructions

  • Combine dry ingredients and mix in a food processor or sturdy blender.
  • Add wet ingredients to the mixture and continue to mix in the food processor.
  • Remove and place in a bowl.
  • Mix by hand to ensure everything is moist and evenly mixed. Mixture should not be sticky. If sticky, add more Shakeology until no longer sticky. If the mixture is too dry, add a tiny amount of water.
  • Place mixture on a cookie sheet. Roll flat with a roller to 1/4-inch thick.
  • Place sheet in refrigerator for 1/2 hour. With a sharp knife, cut into bars. Bars are ready to eat!
